3 Ingredient Pancakes

Before we get to the recipe, guuesss who gets to have a life tomorrow!? (NO WAY! :O ) I’m going to Pittsburgh for half the weekend with my friends! <3 It’s also apparently National Doctor’s Day, so the hospital is celebrating and I get all sorts of free noms! *-* I have about $40 left out of my $100 to use up next week. >_> Looks like I’ll be eating reallyyyy well!

I actually tried out this recipe about two years ago, by way of Cassey’s (anyone a Blogilates fan? :O ) Banana Pancakes recipe, but at the time, I didn’t own a spatula, so they ended up looking like super sorry/sad messes (sigh). They were still tasty, but definitely not picture-worthy. I couldn’t even bring myself to take a picture of it.

Since then, I’ve been a bit wary of pancakes. I make waffles, because it’s pretty hard to screw those up (I have a waffle iron back in CA). But pancakes, I tend to just enjoy at my church in Lewisburg over Easter. :x

I was reminded of this recipe by Tricia, so I decided to try again, now that I actually own a spatula. (My best friend/facebook hubby gave me one of his spatulas when he heard of my plight.) I’ve also been telling Rebecca all year that I’d make em’, so I figured I’d finally make good on that statement.

If you’re absentminded like me, you could potentially put in chili powder instead of cinnamon. Don’t do that.

The chili powder* was used by complete accident (they’re housed in pretty much identical containers, are roughly the same color, start with “c”…totally a mistake anyone could’ve made)! Fortunately, it didn’t alter the taste, so not all was lost. My first attempt was a pretty sorry sight.

I was very tempted to just pretend that everything went well…but in the interest of full disclosure, here it is:

And...it looks like I really haven't improved at all.

Thankfully, I am not so easily discouraged!

They didn’t come out looking super pretty (with practice, maybe?), so that’s the reason for the strategically placed/randomly strewn raspberries! I added a dollop of cookie butter to drown my sorrows away.

3-Ingredient Pancake

3 Ingredient Pancakes

Course: Breakfast
Cuisine: American
Keyword: 5 ingredients + under, easy, healthy, quick
Servings: 1 person

Ingredients

  • 1/2 cup ripe banana mashed well
  • 2 eggs
  • 2 tsp coconut oil

Instructions

  • Add mashed banana, eggs and hemp hearts into a bowl and mix well.
  • Heat a skillet to medium heat + add the coconut oil.
  • Scoop batter onto the skillet and cook until golden brown, + the edges are dry.

Notes

Optional topping ideas include:
  • 1 heaping tbsp hemp hearts
  • dash of cinnamon
  • dash of nutmeg
  • dash of ground ginger
  • 1/4 cup raspberries
  • dollop of Trader Joe's cookie butter or nutella

  1. Aw I can totally relate to the pancake fails! I always seem to pour too much batter in the pan, and then get impatient to flip it… a big battery mess ;) One massive tip that has helped me though when making banana pancakes is to choose an unripe banana – you’d think you loose sweeteness but I promise you don’t! Instead, the batter holds together more when the nana is slightly green at the tip.

    1. Ooo, maybe that’s where I went wrong! I used a sorta ripe one because it’s what I had (and I also figured it’d be either to mash it and all that). Thanks for the tip! I’ll definitely try that out! :]

  2. Yay PGH! Some of my fave people live there :D National Doctor’s Day I thought was March 30 (Alex’s bday) but honestly, who knows. They are all made up anyway. I think my pancake fear ingredient is coconut flour. I’ve never had any luck with that stuff AT ALL

    1. Ah, you’re completely right! I guess the hospital I’m at is just celebrating early because it’s Friday, haha. :P I have not tried making pancakes with coconut flour. :x I would probably be a mess with that though!

  3. Ok, you’re speaking my language with a recipe like this. EASY and hardly any ingredients. SO my thing! I love these pancakes. :) I have a funny pancake story- I used to not know how to cook, and I was making pancakes one day and I flipped them and pressed down with the spatula on top like I was flattening them- my husband and grandfather looked at my like I was psycho crazy asking why I would want a flat pancake. Apparently I thought I was getting the raw batter out, but what I was really doing was brutalizing a pancake. Thankfully this was YEARS ago ;)

    1. Oh man, hahaha. Well, if it makes you feel any better, I likely would’ve done the same thing! ._. I’m definitely not too gifted in the realms of pancake-making! I’m lucky this one didn’t turn into a scramble!

You know one of the reasons I never considered going to medical school (apart from having a weak stomach) is because I knew that nurse, doctors, etc. don’t have much of a social life because of having to work all the time, but it’s great that your getting that this weekend!   5. I am right there with you too on the pancake fails. It’s probably why I always make waffles instead. Never been good at judging when to flip pancakes. I have tried these banana pancakes before and love them! I think it’s because they are mostly banana and I’m a banana addict!

  6. These are so simple to make – I love it! I usually resort to banana pancakes when my bananas are too ripe for me to eat them. Usually I ground up some fresh oats and make a banana oatmeal based pancake and top with blueberry syrup – yum! Thanks for sharing this recipe, I will definitely be keeping it in mind next time I make banana pancakes :)

  9. I have used chili powder instead of cinnamon before on accident and I have to say it wasn’t that bad! I am also a terrible pancake maker….your second attempt looks delish though! :)

  10. I was thinking chili powder was a slightly odd pancake ingredient….it might go a little better in latkes, instead. :P Pancakes aren’t generally a pretty food, but they are yummy, and topped with raspberries, they’re even better!

  12. I am SO bad at flipping pancakes, for the longest time I was so discouraged I never tried to make them. Sad times, because very few restaurants had GF pancakes (though that’s slowly changing). Luckily, blogging changed that because I saw so many recipes I was re-inspired to try again :)

      We found a sushi buffet, but two of the friends I’m going with can’t eat a lot, so they feel it won’t be worth it. I am partially heartbroken, but hopefully we’ll get to have some good noms anyway! <3

  16. Psh, I love that you mask the pancakes with some berries so it looks good. ;)

    Why not try this recipe on a waffle iron? No flipping! I’ve had nightmares with casseys banana pancakes and they turned out to be scarmbled eggs. I can’t even flip regular pancakes without making a messy scramble!

  19. Yum! I make the 2 ingredient pancakes (which usually end up being more because I add oats or coconut flour, vanilla, ect) all the time for the girls and they are so quick and easy! The options are endless.
    I have never been to Pennsylvania but I would google eats for the area or maybe they have a local magazine you can find online like we have 2 here that have the top “Foodie Forty” with places to eat.

  20. I have finally mastered the pancake. So many times I’ve either messed up with ingredients or cooked on too high of heat and they just turn out awful. But that’s what toppings are for right :)

  21. Man, those raspberries look awesome!! I big fat love pancakes! I make them probably twice a month…be sure you are spraying the griddle with a nonstick spray. Or straight melting butter on it Paula Deen style so they flip well. :D

  29. So, my humble opinion is that those 3 ingredient pancakes came out pretty good! I’ve never made pancakes with bananas,eggs and coconut oil before – but I bet flipping them would not be easy!

  37. Yum!! These are a staple in my kitchen – when I’m out and about I like to make some and bring them with me! I add chia seeds to mine and I’ve found that helps to keep them together a bit more and they turn out a bit more pancakey!

      I like coconut oil a lot! It’s pretty much the only cooking oil I use other than extra virgin olive oil! :]

  39. 3 ingredient pancakes? OMG, you are brilliant! Definitely have to try this out (sub the eggs for something else) and add some hemp hearts. I bought some several weeks ago and have yet to actually use them. Great recipe :)

    1. I’ve never tried it with anything other than bananas, but I thinkk any mashed fruit that’d yield the same consistency would probably work! Maybe try mangoes/peaches? It might need something to kinda bind em’ together a little more–are you allergic to flax seed meal? That could potentially help!

    I’m so glad that you posted your initial outcome and were honest about it. I’ve always wondered if I was the only person trying some of these recipes and failing! I’m glad to hear that you weren’t discouraged and that they indeed turned out well!

    1. hahaha, you’re definitely not the only one! I’ve had my share of terrible outcomes, especially when pancakes are involved. (At least it still tasted good though…? :x )

  43. I love pancakes but not really a fan of bananas. So many “healthier” pancake recipes call for banana….can you substitute with something else and get the same effect? Applesauce maybe?

    1. I haven’t tried, but applesauce might(?) work. The consistency might be a little too runny though. Do you like mangoes? I’ve heard that ripe mangoes might work for this!

  44. The trick with these types of pancakes, as opposed to traditional pancakes, is to cook them low and slow. Otherwise the cook to fast and burn or fall apart when you turn them!

  45. I’ve never made banana pancakes before but I’ve definitely used chili powder or cumin in place of cinnamon tons of times haha! Also, you didn’t have a spatula? Glad you have one now!
