3-Ingredient Energy Bars

You’ll likely need a food processor for this. :O Plastic wrap or wax paper would also be super helpful, but I didn’t have any, so I just shaped em’ with my hands. It gets really, really sticky, so beware.

Recipe is from here! I scaled down the proportions written below because I didn’t want to make too many (and didn’t have a full cup of dates) and pressed them into my super-handy ice cube tray for easy separation/portioning/chillin’. :]!

3-Ingredient Energy Bars

Ingredients:
(General Recipe)

  • 1 cup nuts
  • 1 cup dried fruit
  • 1 cup dates, pitted

  • dates
  • dried apricots
  • honey chipotle almonds (obtained from Kroger)
  • barbecue almonds (obtained from Kroger)

Instructions:

  1. Combine the nuts, dried fruits + dates in a food processor and pulse a few times to break em’ up.
  2. Process for 30 seconds, then scrape the edges to make sure nothing’s sticking on the blade. Process again (~1-2 minutes) until a ball forms.
  3. If you have wax paper or plastic wrap, work them into thick squares and then chill for at least an hour, or overnight.
  4. Divide into bars and store.*

*Will last several weeks in fridge or 3 months in freezer.

I will likely revisit this recipe again in the future with other variations (e.g. dried cherries, dried cranberries, dried prunes, raisins, pecans, walnuts, pistachios, chia seeds, chocolate chips, cocoa powder, protein powder, lemon zest, lime zest, ground cinnamon, ground nutmeg, ground ginger, shredded coconut).
